Our business
An authentic family adventure since 1974Our brand was created in 1974 by Maria and Michel Hatat, but the history of the business goes back several generations. Our vineyards came from Marcelle Hatat who passed them on to Maria and Michel. Since 2006 the business has been run by Rémy, Pascal and Hugues, their sons.
Our company is located in Saint Martin d'Ablois, a small, friendly village in the heart of the Champagne region and on the “coteaux Sud” near Épernay.
Our champagnes are produced taking into account the rich traditions of the region, the complexity of the process and the most up-to-date technology. You will find that our champagnes are of a consistently high quality, made using the three main champagne grape varieties: pinot noir, which brings complexity and vinosity; pinot meunier, known for its freshness and lightness; chardonnay, the only white grape, giving elegance and finesse. All our champagnes are a minimum of four years old

Our champagnes
Richness and traditionBeautifully balanced. Both floral and fruity, with a majority of pinot meunier grapes, this champagne has crispness and body. Straw yellow in colour, the bubbles are uniform and lively. Blend: Approximately. 60% pinot meunier and 40% divided between pinot noir and chardonnay. Dosage: 0.8% (8g/l) “liqueur d’expédition” Available in bottles, half bottles and magnums.
Fruity. A pale pink blend with a majority of pinot meunier grapes but nicely balanced with the chardonnay bringing finesse to the wine with aromas of raspberry and gooseberry. Blend: Approximately 60% pinot meunier enhanced with pinot noir and a touch of chardonnay bringing finesse to this champagne. Dosage: 0.8%, (8g/l) “liqueur d’expédition” Ideal for the summer and end of year festivities. An excellent “apéritif”, it also accompanies red or white meats, desserts, fruit or chocolate.
Refreshing. Created in 2008, this extra dry champagne is fresh and lively. It uses the same blended base as the Brut but with less “liqueur d’expédition”. Served at around 8°C, it will allow you to discover the aromas of the pinot meunier. Straw yellow in colour, the bubbles are invigorating. Blend: Approximately. 60% pinot meunier and 40% divided between pinot noir and chardonnay. Dosage: 0,4%, (4g/l) “liqueur d’expédition”.
Softer. Again, the same base as the Brut but with more “liqueur d’expédition” making it a perfect drink for those who appreciate something slightly sweeter. It retains the characteristic aromas of the Michel Hatat champagne, floral and fruity, fresh and round, and can be served as an apéritif or to accompany dishes such as foie gras and blue cheeses. Blend: Approximately. 60% pinot meunier and 40% divided between pinot noir and chardonnay. Dosage: between 3% and 4% (30-40g/l) “liqueur d’expédition”
As the name suggests…extravagant. Using the same base as the brut, we have added a daring amount of “liqueur d’expédition”. The result is suave and unctuous with a fresh finish. A generous and creamy champagne with shades of the Russian Imperial court. Blend: Approximately. 60% pinot meunier and 40% divided between pinot noir and chardonnay. Dosage: 10%, (100g/l) “liqueur d’expédition”. It can be served as an apéritif, but with its aromas of dried fruit, this champagne is also perfect with foie gras, spicey dishes, blue cheese and tropical fruits.
Surprising. For those of you looking for something different. A deeper, more complex rosé, with aromas of red fruit and a touch of pomegranate. The dosage is that of an extra-dry champagne allowing the flavours to work their magic. Dosage: 0,4% (4g/l) “liqueur d’expédition”). This is an excellent “apéritif”, it also accompanies red or white meats.
Refined. This Blanc de Blancs is pale gold in colour with very fine bubbles – an elegant champagne with floral aromas. Blend: 100% chardonnay grapes grown on the Coteaux Sud near Epernay. Dosage: 0.8% (8g/l) “liqueur d’expédition” An excellent « apéritif » but also delicious with fish and sea food.
Powerful. Made exclusively from black grapes. This champagne reflects its terroir with the pinot noir bringing plenty of structure and the pinot meunier the full, fruity aromas. Dosage: 0.8% (8g/l) liqueur d’expédition. Can be served as an apéritif but also throughout a meal, especially with chicken or game.
Elegant. An exceptionally smooth, subtle blend of all three varieties from the 2011 harvest. Initial aromas of plum with a hint of jasmine followed by deeper aromas of vanilla, toast, grilled almonds and honey, reflecting the age of the champagne. Pale gold with fine bubbles. Dosage: 0%.For any moment that requires a truly great champagne….
Soft and fruity. Not a champagne but an aperitif created by adding “eau de vie” to a still champagne wine. Delicious when served cool as an apéritif or with melon or sweet biscuits.

Le clos BarretThe Hatat family welcomes you to their gîte “Le Clos Barret”, a former vine-workers cottage situated below one of our organic vineyards in the village of Port à Binson, ideally situated between Epernay and Dormans.
The house for 5 guests is very well equipped. It is 75m² with two bedrooms, a shower room with a toilet, an open living space (sitting and dining area and a modern kitchen) with a period tiled floor. The first bedroom has a double bed (160cm) and the second has two bunk beds and a chair which folds out into a comfortable fifth sleeping space.
Other amenities: TV, BBQ, heating, washing machine, drier, dish-washer, fridge, oven, micro-wave, raclette, iron and ironing board, board games, Wifi, fold-out cot and high-chair, two garages with two outside parking spaces in front.
Because of its location in the vignes, the access to the cottage is by quite a steep path or by steps. It is therefore not suitable for people with reduced mobility.
Visit St Martin d’Ablois for a champagne tasting in our cellar, Le Bulloir. A tasting of a glass of champagne brut per adult is included in your rental of the gîte. It is possible to purchase on-site with payment by CB/Visa, cash or cheque (French).
